Electric vs Gas Chargrills — Which Is Right for Your Kitchen?

When it comes to adding authentic chargrilled flavour, strong visual presentation and flexible service to a commercial kitchen, both gas and electric chargrills have a lot to offer. For operators choosing between the two, the decision often comes down to more than just cooking performance. Energy use, heat-up speed, cleaning routines, kitchen utilities, and the role of chargrilled food on the menu can all influence which model is the best fit.

Chargrilling itself is a dry-heat cooking method that uses both radiation and conduction to produce succulent, branded food with a distinctive finish. It is ideal for cooking food to order, helping reduce waste while giving customers confidence that their dish is fresh. It also requires no cooking medium, which adds to its operational appeal in busy commercial kitchens.

Why Operators Choose Chargrills

Chargrills offer a flavour and presentation that are difficult to replicate with other pieces of equipment. For pubs, restaurants, hotels and other foodservice businesses, they are especially valuable where freshly cooked meats, burgers and grilled menu items are central to the offer.

Falcon has supplied chargrills to the UK foodservice industry for many years, with particularly strong use in the pub and restaurant sector, reflecting the enduring demand for robust, high-performance grilling equipment.

The real question for many kitchens is not whether to choose a chargrill, but which is the better option: gas or electric.

Gas Chargrills

Traditional Performance and High-Output Cooking

Gas chargrills have long been the traditional choice and remain a strong option for kitchens where chargrilled food is a key part of service. Falcon gas models are designed with a full-width cooking area for maximum output, heavy-duty cast iron components for excellent heat retention and durability, and even heat distribution to help eliminate cool spots across the cooking surface.

The design also focuses on practical day-to-day use. Reversible, angled and channelled brander bars can be cleaned and rotated easily, even during busy periods. A resting area at the front of the unit helps keep food warm without overcooking, while individual burner controls allow sections of the appliance to be turned down or switched off during quieter periods.

This gives operators useful control over performance and energy use throughout service. From a food perspective, gas chargrilling delivers the classic result many chefs expect: strong branding, familiar texture and the traditional flavour profile associated with chargrilled cooking.

Where chargrilled dishes are a major part of the menu, and the appliance is likely to be in regular, sustained use, gas is often the preferred choice.

Why choose it?
Choose a gas chargrill if chargrilled food is a major part of your menu, you need a traditional high-output solution, and your kitchen runs the appliance regularly throughout service.

Electric Chargrills

Speed, Responsiveness and Easier Control

Electric chargrills are becoming increasingly popular, particularly in kitchens that need flexibility and responsiveness. One of the biggest advantages is heat-up speed. Falcon’s electric models reach cooking temperature quickly, allowing operators to turn the unit on and off as demand requires rather than leaving it running throughout the day.

In environments where chargrilling is used less frequently or more intermittently, that can be a significant operational benefit. Falcon electric models are also designed for ease of use and cleaning.

Cooking directly on the elements delivers the attractive branding expected from chargrilling, while magnetic side screens help prevent spatter on adjacent equipment and can be removed for cleaning. The elements swivel upwards and lock in place, removable lining sheets help keep the chamber clean, and a maximum temperature setting carbonises food debris so it can be brushed away more easily.

The units are also IPX5 rated, underlining their suitability for demanding commercial environments. In practical use, electric chargrills can offer a greater sense of control. The electric version provides a wider choice of temperature settings, and temperatures can be changed more quickly than on gas.

Why choose it?
Choose an electric chargrill if you want faster heat-up times, more responsive temperature adjustment, and a model that can be switched on only when needed during intermittent service.

Energy Efficiency

A Key Point of Difference

One of the clearest distinctions between gas and electric chargrills is how they are typically used during service. Gas models tend to take longer to heat up, so once switched on, they are often left on all day, usually turned down during quieter periods.

Electric models, by contrast, reach temperature in minutes and can therefore be switched on only when needed. For businesses where demand fluctuates throughout the day, that responsiveness can make electric models especially appealing.

For high-volume kitchens running a chargrill continuously, gas may still make more sense operationally. In other words, the best option often depends less on the appliance itself and more on the service pattern in your kitchen.

Food Quality and Branding

Is There a Noticeable Difference?

For many buyers, the biggest concern is whether electric can truly match gas when it comes to finished results. Both gas and electric chargrills deliver branded food excellently, to the point that it can be difficult to tell from appearance alone which model was used.

When it comes to flavour and texture, gas remains the more traditional benchmark. However, while electric may not replicate the gas result completely in every respect, the difference is not far off, and most customers would probably struggle to tell the difference.

That makes electric a very credible alternative for many operators, especially where speed, flexibility and utility access are bigger priorities than tradition.

Cleaning and Maintenance

Different Methods, Effective Results

Cleaning is another area where the two technologies differ, although both are designed to be effective. On gas models, components such as splashguards, brander bars, radiants and drip trays are removable, making deep cleaning straightforward away from the unit.

On electric models, debris can be brushed off the elements, with grease and waste falling into a PTFE-lined cavity and then into a removable drip tray.

So while the cleaning method is different, the outcome is the same: both options are built to support efficient cleaning in a commercial kitchen. The best fit will often come down to which cleaning routine better suits your team and operation.

So, Which Should You Choose?

There is no single right answer for every kitchen. The best choice depends on how often you chargrill, the style of food you serve, your utilities, and how your team prefers to work.

  • Choose gas if chargrilled food is central to your menu
  • Choose gas if you need a traditional, high-output solution
  • Choose gas if the appliance is likely to run continuously throughout service
  • Choose electric if you use chargrilling more intermittently
  • Choose electric if fast heat-up and responsive control matter most
  • Choose electric if utility access or operational flexibility is a bigger priority than tradition

There is very little to choose between gas and electric in terms of food quality, branding and cleaning; the decision is more likely to depend on your available kitchen utilities and how chargrilling fits into your menu and service style.

With gas and electric models available in a range of widths across Falcon’s Dominator Plus and F900 series, operators can choose a solution that fits both their kitchen layout and their cooking demands.
